Sexy Lobster is the latest venture from hospitality entrepreneur Howard Spooner, known for creating vibrant dining and entertainment experiences.
He is also the owner of The George Hotel on the Isle of Wight, as well as its famous Bollinger boat “G Dogg”, often seen zipping around the Solent with guests sipping Champagne and rosé.
Guests will soon be able to travel between The George and Sexy Lobster by boat, creating a truly unique coastal dining experience.
Executive Chef Olivia Brinkley
The kitchen at Sexy Lobster is led by executive chef Olivia Brinkley, whose career includes time at internationally renowned Zuma and Sydney’s iconic Tetsuya’s.
Currently executive chef at her family’s restaurant Brinkley’s in Chelsea, Brinkley brings a distinctive culinary style shaped by European technique and vibrant Asian flavour.
Her approach is simple: focus on exceptional seasonal ingredients and cook them with precision and balance.

In addition to leading the kitchen, Brinkley is also the artist behind the Sexy Lobster visual identity.
A self-taught British artist based in London, she spent much of her childhood in the West Indies – an experience that deeply influences her vibrant and emotive style.
Her large, colourful and playful works combine elements of sea life and the human form, creating bold pieces that run throughout the restaurant.
